1 onion, chopped 3 potatoes, peeled & diced
1 clove garlic, minced
2 carrots, peeled & diced
2 T. oil
1 rutabaga, peeled and diced
2 T. paprika
1 tsp. cumin
2 lbs. beef chuck steak, 1/2 in. cubes
1-14oz. can chopped tomatoes
1 T. caraway seeds
1/4 cup minced italian parsley
1/2 tsp. pepper
2 tsp. salt 10 cups beef stock (Swanson's is great) [PK uses Le Gout Beef Base]

Saute onion & garlic in oil 5 minutes. Stir in paprika, cumin, and cubed beef. Add 1/2 cup beef broth. Cook for 5 minutes. Stir in caraway and cook til liquid evaporates. Add 10 cups beef broth, s & p. Bring to a boil, reduce heat and simmer 1 1/2 hours. Add potatoes, carrots, rutabaga, parsley and tomatoes. Simmer 30 minutes. Make a day ahead, as flavors will wed! May add tiny dumplings & simmer five minutes longer!
